Southern Breakfast Enchiladas with Sausage Gravy
Ingredients
8 flour tortillas
1 1/2 pounds breakfast sausage, divided use
6 eggs
1/4 cup milk
2 tablespoons butter
1 1/2 cups cheddar cheese, shredded
Fresh parsley, for garnish
3 tablespoons flour
2 cups milk
3/4 teaspoon salt
1/2 teaspoon pepper
Directions
Preheat over to 350.
Brown 1 pound sausage and drain excess fat. In a bowl, whisk eggs and milk. Scramble in a skillet with butter until fluffy. Mix with sausage and half the cheese. Fill tortillas with the mixture, roll up, and place seam-side down in a greased baking dish.
In a skillet, cook remianing1/2 pound sausage. Sprinkle with flour then slowly whisk in milk. Cook until thickened. Season with salt and pepper.
Pour sausage gravy over the enchiladas. Top with remaining cheese. Bake for 20–25 minutes in preheated oven until bubbly. Garnish with chopped parsley.
