The crock pot cooks the pork to tender perfection with tasty apples and a flavorful pan sauce.
Pork Tenderloin with Apples and Sage
Ingredients
2 pound pork tenderloin
2 tablespoons Herbes de Provence
2 tablespoons olive oil
3 teaspoons salt
1/2 teaspoon pepper
6 gala apples
1 onion
2 cloves of garlic, minced
10 sage leaves (fresh, cut into thin strips)
1/2 cup white wine
2 tablespoons butter
Directions
Pat pork tenderloins dry with a paper towel. Season with the Herbes de Provence, olive oil, salt and pepper. Make sure each filet is fully coated. Set aside.
Heat a tablespoon of olive oil in a nonstick pan over medium-high heat. Place the pork tenderloin in the oil. Sear 3 minutes on each side. Place pork in crock pot.
Slice apples and onion. Combine the onion, garlic, apples, sage and white wine, Deglaze the pan. Allow to simmer for 3 minutes. Pour over the pork in the crock pot.
Cook on low for 4 to 6 hours or on high for 2 to 3 hours.
When pork is tender, remove from crock pot and set rest for 10 minutes. Strain juices form crock pot into a sauce pan. Add butter and simmer for 3 minutes.
Slice pork and serve with apple/onion mixture and pan sauce.
