A slight sweet, delicately flavored entree.
Honey, Garlic and Mead Glazed Ribs
Ingredients
6 tablespoons honey
6 cloves garlic, minced
2 teaspoons mustard seeds
2 teaspoons salt
1/2 cup mead
2 to 3 pounds pork or beef ribs
2 leeks. chopped
1/2 medium onion, chopped
Fresh thyme
Directions
In a plastic storage bag, combine the honey, garlic, mustard seeds, salt and mead. Add the ribs and coat thoroughly with the mixture. Let sit for at least 4 hours or overnight to allow the flavors to penetrate.
Add ribs and marinade a crock pot. Top with leeks, onions and several sprigs of thyme. Cook on low for 6 to 8 hours until ribs are tender. Serve with the pan juices.
